Strudel recipe: potato and chanterelle strudel

There are certain dishes that you could just eat every day. For us, strudel is one of them - in any variety. You can prepare them hearty, sweet or spicy, depending on your mood. That's why we have a recipe from the kitchen of Krumers Post Hotel & Spa for you: potato-chanterelle strudel. Simple and quick to prepare, this strudel is a delight for everyone!

Ingredients for the filling (for 4 people):
  • 500g boiled potatoes
  • 500g chanterelles
  • 1 onion, finely diced
  • 50g Butter
  • some chopped parsley
  • Salt & Pepper
  • Marjoram
  • some caraway seeds, ground
  • 50g liquid butter
Preparation

First, wash the potatoes and boil in their skins, peel and cut into flakes. Then finely dice the onion and fry in butter. Add the chanterelles to the golden roasted onions and roast briefly. Carefully fold the potatoes into the onion-mushroom mixture. Season to taste with the spices. Brush the strudel dough with the liquid butter and spread the potato-mushroom mixture on top. Roll up the strudel and bake in the oven at 180 degrees, 40 minutes, on the middle rack, until golden brown. Now you can serve the strudel and enjoy!

As you may have noticed, we in the Seefeld region love strudel! That's why we organize the big Strudelfest in Seefeld every summer. Here, nearly 30 strudel stands offer over 60 different strudels - an absolute strudel heaven! You'll find all kinds of great creations: of course there's the apple strudel like grandma used to make, but also newly interpreted vegetarian, vegan strudels, creative strudels with pulled pork, ice cream strudels and sooo many more. Of course, this year you'll also find the potato-chanterelle strudel described above. So stop by and taste your way through the huge strudel variety! In addition to the culinary delights, you will also find a program full of tradition and entertainment for the whole family: many different musicians will provide the right sounds and the Seefelder Plattler will show their customs. For the little visitors there are pony rides in the spa park and an entertaining children's program. Other attractions such as sawing, Hau den Lukas, alphorn blowing or laser biathlon will give visitors the opportunity to demonstrate their skills and abilities.
